Masala chai tea is a warming and delicious hot beverage that's easy to make at home. It's full of delicious flavors that will remind you of beautiful India.
2tbspgrated gingerfor less taste of ginger; slice a few pieces of ginger instead of grated
3tbspblack teapreferably Assam or Ceylon tea
0.6L2.5 cups of water
0.5L2 cups of milk
Sugar or honey to tastesugar is traditional

Instructions
Add the cinnamon stick, cardamom pods, black pepper and cloves to a mortar and crush the spices. You don't need to make it into a powder, but only into smaller pieces.
Add the crushed spices, ginger and water to large pot and turn on high heat until it starts to boil. When it starts to boil, lower the heat slightly and let it boil for about 15 minutes (the liquid will decrease by a third).
Add tea and milk to the pot and lower to low heat. Put the lid on and simmer for about 5 minutes.
Turn off the heat and let it stand for another 5 minutes with the lid on.
Add honey or sugar to taste.
Strain the tea through a tea strainer and pour into the cups before serving.
Notes
If you have some masala chai tea left over, or if you have made an extra large batch, a tip is to save the strained tea in the fridge. It lasts up to 3-4 days and can be reheated in a pot.This is a recipe of how I usually make my masala chai tea, but you can change the recipe depending on what flavors and spices you like.If you want a stronger taste, you can add more tea, spices and ginger etc.Masala chai tea can also be made vegan if you use vegan milk.If you want to make a vegan version of Masala Chai, I can recommend using oat milk or cashew milk - or a mixture of both.
